Vegetarian Cooking Class Set for March 20

PENDLETON --- For those of you contemplating a change in your diet for a healthier lifestyle, consider enrolling in the upcoming vegetarian cooking class led by author Jane Shelton.

Ms. Shelton, a 17-year vegetarian, will teach "No Fear Vegetarian Cooking" from March 20 - April 3 (Thursdays) from 6:30 – 8:30 p.m. The cost is $55.

Her award-winning cookbook, You Can't Judge a Book by its Cover, will be her textbook. While living in Texas, she developed all of the recipes for the book, which placed second in the National Federation of Women's Press in Las Vegas. "It's designed for anyone who wants to learn a creative way of incorporating healthy recipes into your daily regime. It can be a move toward cooking healthier recipes and consequently improving your health," said Ms. Shelton.

The recipes are fast and simple, she said, and include creative breakfast ideas, tasty meatless entrees and all-natural desserts. She says the impetus for the book was the repeated requests for recipes following a cooking class she taught at San Antonio Community College.

"Students enjoyed the benefits of my research and the hands-on demonstrations. You really get results when you incorporate the recipes into your daily diet," said the Central resident.

"People today are concerned about what they feed their families. We're all on the run. We want a healthier diet, but many don't know where to start. This class is way to get started. It's not a diet -- rather a healthy cuisine.

"When I began my journey, vegetarianism wasn't very popular. I had never heard of many of the ingredients, and the recipes were hard to read. I decided to write a book that I wish I could have read when I began," she said.

Ms. Shelton says she's maintained this healthy cuisine because "it's delicious, and the variety, not to mention the increased energy level and all over health benefits."
